IMO S&D in Utica makes the best deer sausage in the Jackson area. I'll be glad to share some if somebody near Hattiesburg wants to try it.

I've heard good things about Van's Deer Processing in Brandon. They are located on hwy 468 about a mile east of the Law Enforcement Academy.

My husband and I use Pitcocks over around Sardis, Ms. They seem to do a good job and the price was not bad either.

I guess I'm hard to please but I cant find anyone that I am happy with over a period of time. When I think I've found what I like, the next time I'm disappointed. I guess thats because its seasonal and the processors are using different people, moonlighters ect.
I am thinking about a processing it myself, I only need a couple deer a year for me and wife and usually give the other to folks that do their processing. Does anyone have a lot of experience to share doing it themselves. What does that 1.5HP hobart cost? etc. A tenderizer? I mostly tenderize the good cuts for Country Fried steak and burger the rest. I do have access to a large smoker and believe I could do a good job with the regular sausage. Summer Sausage and other specialty stuff I would have to learn about. |

IF YOU ARE GOING TO DO IT FOR YOURSELF, YOU DEFINATELY DON'T WANT TO GET A 1.5 HP HOBART. THATS WHAT WE USE AT OUR DEERCAMP. IT WEIGHS ABOUT 200LBS, AND IS ABOUT 18"X36" AT THE PAN. JUST GET YOU A SMALL ONE LIKE THEY SELL IN CABELLAS. I DON'T REMEMBER HOW MUCH THEY ARE THOUGH. A NEW HOBART IS LIKE SEVERAL THOUSAND DOLLARS. WE BOUGHT OURS USED OFF EBAY FOR 350.00, PLUSS 150.00 FREIGHT. IT IS WORTH EVERY PENNY.

I've heard that Country Pleasin's isn't processing deer this year since they moved into their new building from Pelahatchie. Does anyone know for sure? I try to take some around to see what everyone has to offer and I think that Country Pleasin's is the best, Van's is right there with them. Lee's would be second, and the Mean Mallard should stick with Ducks and stop deer processing all together. Threw out 30 pds of sausage because nobody would take it.

I second Jeff and Sherry's Front Porch. Best prices around, $50 for the whole deer done any way you can think of, and vaccum packed.
