Isn't Pitcocks near Batesville? It has good summer sausage.

In Jackson, it's hard to decipher between the many processors, except in price.

Do a little research, and see what folks in other states are paying, and other areas of Mississippi. These Jackson Metro sites are more expensive ... always have been. Just nowhere else to go.

If you do it yourself, try this site for a little Processing 101!

I am thinking about a processing it myself, I only need a couple deer a year for me and wife and usually give the other to folks that do their processing. Does anyone have a lot of experience to share doing it themselves. What does that 1.5HP hobart cost? etc. A tenderizer? I mostly tenderize the good cuts for Country Fried steak and burger the rest. I do have access to a large smoker and believe I could do a good job with the regular sausage. Summer Sausage and other specialty stuff I would have to learn about.

hey dancer...don't go cheap with your grinder....get a good one. If you buy a weak electric grinder you will spend 90% of your time digging white tissue out of the squeeze plate

Is there anything near Hattiesburg? I heard of a fellow in Glendale years ago but I've never been able to find him.

Parkers in Stringer is where I took mine last year and am very satisfied. Had 3 hogs and 3 deer processed and am very satisfied. They process full time and will continue to get my business.

The place in Glendale was still open last year, can't remember the name but it has to be deboned to take it there.

I currently use the Outfitter in Richland; I have only heard good things about them.

I used to use Vanns, but had to throw out the last deer they did b/c it was full of hair. Apparently they don't wash the meat very well before processing. Over the past couple of years, I have had other people tell me they are not happy with Vanns.

The lady at the Outfitter told me they emphasize washing the meat.

I usually grind everything but the loin/strap.

We used to use Sullivan's in Winston County but it took awhile to get the meat back. Now we use Jack Brown's near Meridian and he's great.

14ReelFun, Can you give me some prices on Parker's in Stringer. I have been doing my own with a make-shift grinder. But I think I might be better off letting someone do it for me. Do you know its your deer you are getting back?

Lokana, how about Pool Creek, I think that the guy works as a butcher at a local grocery store. Does he do each individually??
Thanks

SouthernPine I don't remember price and I'm at work but Parker's number is 601-725-4689. He processed a couple of wild hogs for me last year along with a couple of deer and did a great job on them also.

I have been using Wilson's in Crystal Springs for the last 4 or 5 years and never had a problem. I always bone the meat out and have hamburger and smoked sausage made. I had some patty sausage made that was so hot I could not eat it but that was my fault, I told them hot. I prefer their smoked sausage. I won't say it is the best but it is what I like the best.
