I used Mean Mallard once and never again. Took a doe my son-in-law had killed the first or second week of the season and it was not ready until well after the first of the year. Price was very high. The hamburger was inedible and looked nasty. The place smelled to high heaven. They may have corrected the problems now but it is too late for me. This is not a personal rant against them since I still shop there quite a bit and like the store but I will never use their processing again. Maybe someone else has used them recently and has a better report. I hope so.

S&D and Vans. Vans sausage is great, no doubt, but like their tamales they just use too much fat. and I'm telling you, they put something in that stuff that makes me have to keep getting off my stand if you know what I mean (maybe all that fat), it's messing up my hunting!... I like S& D sausage alot and now that the S&D are S and D (they have split), I'm going to try Dewights (the D) new store on hwy 18. I hope Dewights is good as much as I have been promoting him on here, I may get alot of people mad at me.. I'm just assuming as good as they were together, he has to be good.

BB's in Greenwood is the one I use. Everything he makes is awesome. The smoked sausage is incredible. I may have to give Gator's place a look for the next one I kill.

The Mean Mallard in Ridgeland. I have been using them for 2 years and never had to wait more than 5 days on my meat. They are very stand up and professional guys.

I use the buck shop in pocahontas. Mike makes great sausage, tamales, stuffed backstrap, smoked hindquarters. I haven't had anything from his place that wasn't great.

Dwight's in Raymond. Got my first of the year back a little while ago and the sausage was excellent. Me and a buddy dropped off a couple more yesterday. Gonna try the summer sausage now.

Doesn't sound like very many old skool guys on here like me, but here goes. I still bone out all my meat and separate all the muscles, cut the loins and backstraps into steaks along with most of the hind quarters. I have a small, hand cranked grinder that works great, easy to set up, take down and clean. From my experience, if you cut as much of the undesirable stuff(tendons, gristle, etc.) off your meat before taking to a processor or grinding it yourself, it pays. IMO if you take a deer that is only cleaned, skinned, or quartered into a processor, you are more prone to getting a lesser quality product, especially during their busiest times. When I take mine into Vans to get some of their excellent smoked sausage, they are always easy to deal with and appreciative that the meat is ready to be ground, mixed, and smoked for sausage. I usually get mine back in a week, sometimes 1 1/2-2 weeks. I'm going to try the Outfitters next, even though Van's is a lot more convenient, so I can do a taste test. Country Meat Packers used to be the best, but I also called this year and they still are not taking deer. Wish they were. Would love to have more time to try the others that have been mentioned. 5-10 minutes from Van's (depending on how bad the old ladies are driving in Brandon at the time), and that's hard to beat.

Dave's Custom Meats in Vicksburg has the best sausage I have ever tasted! They have several flavors to choose from and its never over cooked and always looking near to perfect. Not bragging or anything but they know what they are doing.

I used to use Lee's & Van's until Lees moved. Now Van's is my 1st choice simply due to location. Has anyone used the new (1-2 yrs old)processor up in Canton? Don't know the name, but I've eaten sausage from there and they are good. May go there this year.

IMO lee's in byram is the best. Im 25 now and all through highschool and up till now I'v heard nothing but good things about how Vans meat taste,I'v heard its the best, but everyone claims you do not get your deer back. I just cant deal with that, so I choose to go elsewhere. The processor at "Mean Mallard" aka. Big buck sports was bought out by Lee's , so... if your like me and had poor results with "mean mallard" , its ok you can try it again because lee's is nothing but quality. If you are wondering where to go, give lee a try you will not be disappointed. |

I have to agree with the butcher, Stevie's deer processing is by far, the best processor that we have used. I noticed that the facility is always very clean and the meat is packaged very well. We love the jerky, summer sausage, bacon burger, and regular sausage!! Wonderful place in my book. The prices are very reasonable and this is the only place that use for processing our deer. Best around that we have found.

I have used the deer processor in Canton last year on one and was very displeased the sausage was mediocre at best, and the smoked sliced shoulder was raw. Like someone else said got burned at mean mallard and won't ever go back rancid meat. I used Dwights on 18 for another deer last year and he will get all my business. Matter of fact I have one to take to him this afternoon :) His jalepeno cheddar is the best I have tasted. Would lone it if Country Pleasings opened back up but they haven't to my knowledge.
