Firecloud. I don't think that's a shoulder wrapped in bacon I think its a fatty which is basically like stuffed meat loaf wrapped in bacon.
I don't know about the diet coke I use wine.
I cook the entire shoulder from where I cut the feet off to the shoulder blade still on the bone. If you wanted it smaller you could just run your knife down the bone pull it out and tie it back with twine. If you cook it long enough that lower section will get tender too. On the bacon weave all the tag ends are on the bottom. You shouldn't need many toothpicks.

Answers:
A. I think it should. I think it has more to do with the carbonation in the coke than anything.

B.We cooked the whole thing, from where you normally cut the front legs off and up. It is very tender after slow cooking overnight. I watched my mom take a pair of tongs and reach into the pan and pull the shoulder blade and leg bone out of the pan. The meat did not even have to fall off the bone, it was already detached during the cooking process.

C. We don't really wrap it in bacon, just lay the bacon on top of it in the pan, covering the top. This is sufficient to keep it from drying out.

D. No
