do you feel like it's worth it or not..i've got a place that charges 35 bucks to process, seems like it would be hard to beat that doing it yourself. what do y'all thinkg?

35$ IS A GOOD PRICE, BUT SOMETIMES YOU GET WHAT YOU PAY FOR. I CHARGE 55$ BUT iI CUT ONE DEER AT A TIME, AND I MAKE SURE IT IS TRIMED OUT, AND THE MEAT YOU BRING IS THE MEAT YOU GET BACK.

It's worth it to me, but it can be a pain sometimes, especially when it comes to sausage (stuffed). It's not really about the money though. A good processor deserves to charge a good price. Personally, I like the satisfaction of knowing where that deer has been from the moment I pull the trigger, until the moment we cook it. Getting the whole family involved in the process is pretty fun too.

I agree, when you get your kids involved, they seem to appericate where the food comes from.

If you have the equipment and knowledge, do it yourself, if not, have a processor do it right with no wasted meat!!

If you use a processor, use a good honest one. I haven's had the best of luck with mine. I threw half the sausage and ground away last year because there was too much hair in it. By the texture of it, you could tell that most of the deer fat was left on and not trimmed...not very tasty. I questioned them when I picked it up why part was frozen and the other was freshly processed. I just got a shoulder shrug. Me and my friends will be processing our own from here on out. You know what it is, where it came from, and it's done right.

It is not a matter of cost or failure of others to do good processing work for me. I simply like to have total control over the entire process from harvest to the table. It's about selecting a "good eating" deer to kill, shot placement to minimize meat damage, good cleaning and skinning procedures to avoid gamey taste, attention to how the meat is cut from the carcass and butchered into various cuts, being able to custom trim fat, membrane, bone fragments, hair, etc., control over how it is packaged and wrapped for the freezer, and of course how it is eventually cooked and served that makes me prefer to be the ONLY one doing anything to the deer I kill.
Then again, I also compost and raise organic vegatables and bake all my own bread too. It is just a part of "good earth" living as far as I am concerned. Try your own processing and see if you don't find the results to be satisfactory. As for knowledge, you can research the things you need to know easily on the internet or ask others on this forum. I will be happy to share any tips I can with anyone that wants to do their own processing.

Me personally, I like to process my own. Makes you enjoy it more when you eat it and it just seems to taste better. Simply for the fact that you know that the meat is clean and has been handled properly. I think you should give it a try. Good luck with it and if you need any help just let us know here on the forums.
